PROFIT PROJECTION:
Given that a 5ltr tub contains approx 3.5kg of gelato and one scoop weighs about 80gms, the industry norm is to extract
about 40 scoops from one tub.
COST OF SALES:
It is suggested that the average unit sale would be a two flavour cone with a cost of around $1.30 including a cone. These sell for $3.75 and a 5 litre tray ( 3.50 kg ) should produce approximately 23.3 x 150 gm. cones or $87.50 in sales. At these projections the gross profit per cone is 65% - quite a healthy percentage.
